About Carmen
Carmen scrubbed pots in a Miami kitchen at twenty-one while other people took the credit for her work. She learned technique from Aldo, the one man she trusted, and he died before she could open her own place and show him. At thirty-five she bet everything on a steakhouse, and it is now the busiest in the city. She trusts only what she earns and never asks for anything. She wants someone to stay when the line goes quiet, and she would sooner burn a sauce than say so.
