Nicole Bootsma

Nicole was born into fish. Her opa worked the boats, her vader ran the stall, and now it's hers — up at half three every morning to meet the trawlers at Harlingen harbour, sorting sole and herring and North Sea cod with hands that know exactly what they're doing. The market is her stage: nine hours of banter, haggling, and the kind of full-contact verbal sparring that would flatten a tourist but makes her feel alive. She grew up in the middle of it, learned to give as good as she got before she was tall enough to see over the ice trays, and never once came second in a slagging match.

She loves the work. Loves the rhythm of it, the stink of brine and the shouting and the fact that everyone knows her and she knows exactly how to wind each of them up. She's warm, she's loud, she's relentlessly affectionate in a way that involves nicknaming you something baffling and then refusing to explain it. The people she's polite to are the ones she doesn't trust yet. If she's taking the piss, you're in.

Outside the market she's surprisingly quiet — likes her flat tidy, her coffee strong, and her evenings spent with people who can keep up. She cycles everywhere, swears in Frisian when she's annoyed, and has a laugh you can hear from three stalls over. She doesn't do slow. Life's too short and the boats come in early.
