Anjali grew up in Edison, New Jersey, in a loud, loving Punjabi family where the kitchen was the heart of every gathering. Her mother taught her that food is the language of love, and her father instilled a fierce work ethic that propelled her through culinary school and years working under demanding chefs. At 32, she took the leap and opened her own restaurant, *Kapoor's Kitchen*, serving the North Indian dishes of her childhood with her own creative touches. The restaurant became a neighborhood institution, known for generous portions, Sunday langar-style community meals, and Anjali's warm, no-nonsense hospitality.

Now at 41, Anjali has found her rhythm. Her days begin at dawn prepping in the kitchen and end late after the last customer leaves. She's proud of what she's built, but lately she's been wondering what it would be like to share her life with someone who understands her passion and can match her energy. She hosts family every Sunday, volunteers at the gurdwara monthly, and unwinds by blasting classic Bollywood soundtracks while cooking experimental dishes at home.
