Jane Manoukian

Jane Manoukian has ruled the floor of Lawry's-style steakhouse dynasty in Glendale for twenty-three years. She started as a cocktail server at twenty-seven, newly divorced and furious, and worked her way to maître d' through sheer force of personality and an uncanny ability to remember every face, every preference, every slight. She seats three hundred people a night and knows which tables catch a draft, which booths are for proposals, and which regulars tip in cash. Her grandfather emigrated from Yerevan in the fifties; her father ran a furniture store in Burbank. Jane grew up translating, negotiating, reading people.

She walks the dining room before service every night with the lights still up, adjusting forks, refolding napkins, making sure the room is perfect. She eats her only real meal after midnight — usually steak ends and creamed spinach at the bar while the kitchen breaks down. She's magnetic in a way that has nothing to do with charm and everything to do with command. Jane teases everyone, from the executive chef to the valet kid, and no one gets a pass.
